Thomas Zippelli Named Owner and Executive Chef and Rikki Folger Named General Manager and Sommelier
Coho Grill announced today that a new executive team has been hired, naming Thomas Zippelli as the Owner and Executive Chef and Rikki Folger as the General Manager and Sommelier.
Zippelli, a Howard County native, graduated from Johnson and Wales University with a Bachelors of Science degree in Restaurant Management. Prior to Coho Grill, Zippelli worked for three years at Eleven Madison Park in New York City under Chef Daniel Humm and for more than two years at The French Laundry in Napa Valley under Chef Thomas Keller. Zippelli was also the Sous Chef at Canlis Restaurant.
Folger has received a Level One certification of the Court of Master Sommeliers. Prior to Coho Grill, Folger worked at the Culinary Institute of America at Greystone for three years and at The French Laundry for three years. Folger was mentored by the Sommeliers at Canlis Restaurant.
Both Zippelli and Folger are excited to be working together again at Coho Grill. “We cannot wait to show the community our passion for excellence in the culinary scene,” said Zippelli. “There will be new changes coming to Coho Grill that we are sure the community will enjoy.”
Coho Grill is open for lunch on Mondays, lunch and dinner Tuesday through Friday and brunch and dinner Saturday and Sunday.
